What is "Hanging Weight"?

Refers to the weight of the pig carcass after removing the head, hide, and entrails but before processing into individual cuts. It's important to note that hanging weight is not the same as the final packaged meat weight. After trimming and processing, you can expect to receive approximately 65-70% of the hanging weight in packaged pork.
